Ground Turkey Taco-Stuffed Peppers

Ingredients
- 1 lb (450 g) lean ground turkey
- 3 large bell peppers (any color), tops cut off and seeds removed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/4 tsp cayenne (optional)
- Salt & pepper, to taste
- 1 cup canned diced tomatoes (no salt added)
- 1/2 cup black beans or corn (optional)
- 1/4 cup shredded cheese (optional, for topping)
- Fresh cilantro or green onions for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cook the turkey filling: Heat a nonstick skillet over medium heat. Add the ground turkey, breaking it apart. Cook for 5–6 minutes until browned.
- Add aromatics & spices: Stir in onion, garlic, chili powder, smoked paprika, cumin, oregano, cayenne, salt, and pepper. Cook 2–3 minutes until onion softens.
- Add tomatoes & optional beans/corn: Stir to combine and let simmer 3–4 minutes to thicken slightly.
- Stuff the peppers: Spoon the turkey mixture evenly into the bell peppers. Top with cheese if using.
- Bake: Place stuffed peppers in a baking dish, cover with foil, and bake 15 minutes. Remove foil and bake an additional 5 minutes to melt the cheese and lightly roast the peppers.
- Garnish & serve: Sprinkle with fresh cilantro or green onions. Enjoy as-is or with a side of cauliflower rice, quinoa, or a simple salad.
