Tacos are an dinner STAPLE but who says it needs to be the OG tacos?  How about Taco INSPIRED.  Here is a quick, easy, and healthy recipe for you and the family!  Happy Taco Tuesday!

Ground Turkey Taco-Stuffed Peppers

Servings: 2–3
Prep & Cook Time: 25 minutes

Ingredients

  • 1 lb (450 g) lean ground turkey
  • 3 large bell peppers (any color), tops cut off and seeds removed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp cayenne (optional)
  • Salt & pepper, to taste
  • 1 cup canned diced tomatoes (no salt added)
  • 1/2 cup black beans or corn (optional)
  • 1/4 cup shredded cheese (optional, for topping)
  • Fresh cilantro or green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the turkey filling: Heat a nonstick skillet over medium heat. Add the ground turkey, breaking it apart. Cook for 5–6 minutes until browned.
  3. Add aromatics & spices: Stir in onion, garlic, chili powder, smoked paprika, cumin, oregano, cayenne, salt, and pepper. Cook 2–3 minutes until onion softens.
  4. Add tomatoes & optional beans/corn: Stir to combine and let simmer 3–4 minutes to thicken slightly.
  5. Stuff the peppers: Spoon the turkey mixture evenly into the bell peppers. Top with cheese if using.
  6. Bake: Place stuffed peppers in a baking dish, cover with foil, and bake 15 minutes. Remove foil and bake an additional 5 minutes to melt the cheese and lightly roast the peppers.
  7. Garnish & serve: Sprinkle with fresh cilantro or green onions. Enjoy as-is or with a side of cauliflower rice, quinoa, or a simple salad.
