Chicken Carbonara w/ Butternut Squash Noodles
When I go into the kitchen, I always have an idea of what I want to do but don’t always have a plan. Sometimes I open the fridge and see what happens. It can be exciting and tasty but it can also turn out, well, not the greatest. This was a combination of 4 foods and some seasoning and it came out better than expected!
Ingredients
- 1lb Chicken Breast (boneless, skinless)
- 3 cups butter nut squash noodles
- ½ cup Heavy Whipping cream
- 4 slices bacon (previously cooked)
- Pam Olive Oil cooking spray
- Salt and Pepper to taste
- You will need a non-stick frying pan and a large sauce pan or dutch oven style pan.
- Take the chicken and cut into cubes. The sharper the knife, the better in this case as symmetry equals even cooking.
- spray a large cooking pan or wok with pam cooking spray(light spray, not drenched) or you can use 1 tbsp olive oil to coat the pan. Heat the pan for 2 minutes on high then place the chicken in the pan. Add salt and pepper to season.
- In the dutch oven, place the noodles and the heavy cream on high for 5 min, stirring through out .
- Once cooked the chicken is cooked through, you will add the chicken to the noodles and heavy cream.
- Dice the cooked bacon and sprinkle in to the dutch oven. Stir and cover.
- This will cook and simmer on low for 5 – 8 min.
- Once time is up, plate the mixture. It makes 4 servings
