What do you have?

So, we have all been there.  Staring into the fridge at random ingredients, wondering what we can make with this hodge podge of random things.  I have these 5 ingredients in my refrigerator. I have a full pantry as well. What can I make?

Ground beef, cheese, fingerling potatoes, grated cheese, and broccoli

With those ingredients, you could make a delicious cheesy beef and potato casserole with broccoli on the side! Here’s a simple recipe idea:

Ingredients:

  • 1 lb ground beef
  • Fingerling potatoes, sliced into rounds
  • Broccoli florets
  • Shredded cheese (cheddar or your preference)
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef until browned and cooked through. Season with salt and pepper to taste.
  3. While the beef is cooking, boil or steam the fingerling potato slices until just tender.
  4. In a baking dish, layer the cooked ground beef evenly at the bottom.
  5. Arrange the cooked potato slices on top of the beef.
  6. Spread a layer of shredded cheese over the potatoes.
  7. Place broccoli florets around the edges or on top of the casserole.
  8. Sprinkle additional grated cheese over the broccoli.
  9. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  10. Serve hot and enjoy your cheesy beef and potato casserole with a side of broccoli!

This dish combines the richness of beef and cheese with the hearty texture of potatoes and the freshness of broccoli. It’s a satisfying meal that makes good use of the ingredients you have on hand!
