BBQ Bacon Ranch Chicken Tacos
Well, if you don’t like bacon. If you don’t like ranch. If you don’t like tacos. Stop reading and we can’t be friends. These were delicious and anytime I can marry chicken, bacon, and ranch in harmonious matrimony, gosh darn it, im going to do it!
Ingredients:
- 14 oz Chicken thighs, Diced
- 5oz corn kernels (cooked)
- 4oz cabbage
- 4tbsp sour cream(w/ ranch powder)
- 1 slice bacon, diced
- 1 oz BBQ sauce of choice
- 8 Mission carb conscious Street Tacos
Instructions:
- Preheat the oven to 425 degrees
- Take the diced chicken thighs and place in a mixing bowl with corn, salt, pepper, BBQ seasoning of choice. Combine these together
- Place that mixture in a small pan and top with bacon.
- Bake uncovered for 25-30 min or until chicken has temp of 165 degrees
- Mix cabbage, ranch sour cream, and some pepper in a mixing bowl for the slaw. Combine
- In the air fryer, place the tortillas in and toast till they hold the traditional taco position
- Fill the taco shells with the chicken mixture, top each with a drizzle of BBQ and a sprinkle of cheese
- Plate the tacos and slaw mixture.
