If Reese’s are one of your weaknesses, I’m not going to tell you to replace them with a rice cake and pretend it’s the same thing.
It’s not.
Instead, let’s make something that actually tastes like dessert but gives us a little more nutritional value.
Peanut Butter Protein Cups
What you need:
- 1 cup plain nonfat Greek yogurt
- 1/2 cup powdered peanut butter
- 1 scoop vanilla protein powder
- 1–2 tbsp natural peanut butter
- 1 tbsp honey or maple syrup
- 3/4 cup dark chocolate chips
- 1 tsp coconut oil
- Pinch of sea salt
How to make them:
Mix the Greek yogurt, powdered peanut butter, protein powder, peanut butter and honey until smooth.
Spoon the mixture into 8 silicone muffin cups.
Melt the chocolate chips with the coconut oil and spoon a thin layer over each cup.
Hit the top with a little sea salt.
Freeze for about 1–2 hours until firm.
Let them sit out for a few minutes before eating so you’re not trying to bite into a hockey puck.
Makes 8 cups.
Depending on the brands you use, you’re looking at roughly 140–170 calories and 8–10g of protein per cup.
And remember…
We’re making a healthier peanut butter cup.
We’re not making broccoli.
It’s still dessert. 😂
