It’s the holidays. You know there will be cookies and candy galore. If you are looking to stay on track but still participate in the holiday fun, bring these to the next party you have. These “healthy” cookies will give you a bit of what you want while keeping whole foods in your sweets.
Ingredients:
- 1 cup almond flour
- 1/2 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup coconut oil (melted)
- 1/4 cup maple syrup or honey
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup dark chocolate chips (70% cacao or higher)
- 1/4 cup chopped almonds or walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the almond flour, rolled oats, cocoa powder, baking soda, and sea salt.
- In another bowl, whisk together the melted coconut oil, maple syrup or honey, egg, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and stir until combined.
- Gently fold in the dark chocolate chips and chopped almonds or walnuts (if using).
- Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with your fingers or the back of a spoon.
- Bake for 8-10 minutes, or until the edges of the cookies are set and slightly golden. The cookies will firm up as they cool, so don’t worry if they seem soft when you remove them from the oven.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
